Another recipe for a delicious and easy to make dessert. The filling in these blinis-pirojki can be very diverse: cottage cheese, canned fruits, berries, cabbage, rice with mushrooms, liver, meat. I often make these little pancakes for breakfast.
For the dough:
Cottage cheese
100 g
Egg
1 pc
Kefir
1 cup
Flour
1 cup
Sugar
1 tsp
Baking soda
1/2 tsp
Sunflower oil
for frying
For the filling:
Jam
(thick)
To prepare blinis-pirojki with jam, mash the cottage cheese with the egg, add half of the kefir and mix well.
Add sugar, flour and mix again.
Dissolve the soda in the remaining kefir.
Pour the kefir into the dough and beat everything with a mixer.
Pour the batter onto a well-heated, buttered small diameter skillet (twice as much as for baking thin pancakes). When the batter slightly sets but the top is still raw, place jam on half of the pancake and cover it with the other half.
Fry on both sides until golden brown, covering the skillet with a lid.
Place the ready blinis-pirojki with jam on a plate and sprinkle with grated chocolate and ground nuts.
