Recipe for fluffy dumplings with berry filling. This dough pairs well with berries and prevents the filling from leaking out. However, you can use any filling you like. I prefer to steam these dumplings, but boiling them in water is also an option. In my opinion, steamed dumplings turn out even fluffier, especially with strawberries and cherries... very delicious!
Flour
4 4/5 - 5 4/5 cups
Kefir
2 cups (or buttermilk)
Yeast
2-3 tbsp (fresh)
Baking Soda
1/2 tsp
Sugar
1 tbsp
Salt

To prepare yeast dough on kefir for dumplings, pour sugar, salt, yeast, and baking soda into slightly warm kefir (or buttermilk). Stir with a spoon and let it sit for about 20 minutes.
If you don't have fresh yeast, you can use dry yeast (1 tsp).
Gradually add sifted flour. When the mixture becomes quite thick, knead it by hand.
The dough should be soft, slightly sticky to the hands, but still hold its shape (not be too runny). Cover it with a towel and place it in a draft-free warm place for 30-40 minutes.
Once the dough has risen, gently punch it down. The yeast dough on kefir is ready. You can start shaping the dumplings.
