In principle, you can play with the taste here and instead of mulberries, take cherries, raspberries, or cranberries, but that will be a completely different story.
To prepare mulberry sauce, sauté finely chopped onion in olive oil until softened. Do not overcook, as it will affect the taste.
Add the mulberries, stir, and sauté them with the onion for literally a minute.
Then add honey, wine, and mix. Cover and leave on medium heat for 5-7 minutes, stirring occasionally. Add lemon juice, pepper, and a pinch of salt. Heat for another minute and set aside.
Blend the mixture until smooth. The mulberry sauce can be served as is. If you want a smoother consistency, strain the sauce through a sieve.
