An incredibly delicious Greek sauce, the recipe of which is very simple. This sauce is called in various ways - tzatziki, tsatsiki, dzatsiki, satsiki, and there are many recipes. Here I use sour cream, although ideally Greek yogurt straggisto (which means in Greek - strained) is needed. However, it is not sold here in Ukraine. In principle, you can make it yourself: take full-fat unsweetened yogurt, place it in cheesecloth, hang it and leave it for 10-12 hours to drain - that will be Greek yogurt. But, firstly, it takes a long time, and secondly, it is also difficult to find full-fat unsweetened yogurt here.
Sour Cream
1 1/4 cups
Cucumbers
2 pieces
Olive Oil
2 tbsp
Garlic
2 cloves
Almonds
2 tsp
Lemon Juice
1 tbsp (or white wine vinegar)
Salt
pinch
Dill
To prepare tzatziki, grate the cucumbers on a fine grater and squeeze out the juice.
If the cucumbers are overripe, you need to remove the skin and seeds.
Add the grated cucumbers and minced garlic to the sour cream, and mix well.
Add finely chopped dill, olive oil, minced almonds, and mix everything well again.
Olive oil can be replaced with sunflower oil. If almonds are not available, it's okay, it's also very tasty without it. In general, you can experiment here.
Before serving, the sauce should be well chilled. Tzatziki goes well with any meat, roasted potatoes, or you can simply serve it on bread or toast.
