Very tender and delicious gingerbread cookies. This recipe is one of my favorites. This amount of ingredients makes quite a lot of gingerbread cookies (5.5-6.5 lbs). If you need a smaller amount, divide the portion in half. I must admit, I never do this, the cookies always get eaten up quite quickly, especially since they store excellently. You can also sprinkle the cookies with coconut shavings or chopped nuts for extra deliciousness.

For the dough:
2 cups
5 cups 2 tbsp
2 cups 2 tbsp
Sunflower oil
7/16 cup (refined)
Vanilla sugar
4 packets, 2 tsp each
Baking powder
4 packets, 1 tbsp each
4 pcs (2 egg yolks and 2 eggs)
For the sugar glaze:
Powdered sugar
2 cups
2 pcs (remaining 2 egg whites)
To prepare gingerbread cookies on a brewed dough, start by boiling the milk. In a separate bowl, sift flour (250 g), add sugar (500 g), and salt. Mix well.
Then pour the boiling milk into the dry mixture and mix well. The dough should be smooth without lumps.
Add butter, mix again, and let the dough cool slightly, about 15 minutes.
Into the cooled dough, add vanilla sugar, eggs (2 egg yolks and 2 eggs), and beat everything with a mixer until smooth (you can use a whisk).
Then add sifted flour (2.2 lbs) with baking powder, mix first with a spatula, and then with your hands on the table. The dough should be soft but not sticky.
Do not pour all the flour at once, adjust according to the dough. It depends on the flour, you may need slightly less or slightly more.
Divide the dough into four parts, shape into round rolls, and let them rest for 15-20 minutes.
Roll out each piece of dough to a thickness of 0.3 inches and cut out the gingerbread cookies using a shot glass or a cup (or a special cookie cutter if you have one).
Place the cookies on a baking sheet lined with parchment paper. Bake the cookies in a preheated oven at 350°F for 15-20 mins. You will get many cookies, 60-70 pieces, depending on the size.
Now, prepare the glaze. Whisk powdered sugar with egg whites using a mixer or by hand. Take a brush and completely coat each cookie with the glaze. Arrange the cookies and let the glaze dry.
You can also decorate the cookies with colorful icing for an extra festive look!
