This recipe is a real find, I highly recommend it, be sure to take note. You will only need simple ingredients, the dough can be made by a child in 5 minutes. And in the end, you will get the most delicious and aromatic gingerbread cookies or biscuits, call them whatever you like. They smell like honey, caramel, with a crispy top and soft inside, delicious!

2 eggs + yolk
Cane Sugar
3/4 cup

Neutral Vegetable Oil
6 tbsp
Baking Soda
1 tsp
Apple Cider Vinegar
1 tbsp
Honey
2 tbsp
Vanilla Extract
Flour

Let's prepare the dough for honey cookies, it's quick and simple. Beat eggs, salt, and sugar until fluffy.
It is preferable to use cane sugar, it gives a caramel flavor, but if you don't have it, white sugar will also work well.
Now add all the other ingredients: oil, honey, vanilla, and baking soda dissolved in vinegar, mix well. Then add flour, mix. In the end, you'll get a soft sticky dough.
Line a baking sheet with parchment paper. Roll the dough into balls the size of a walnut, if the dough is sticky, dust your hands with a little flour. Place the balls on the baking sheet. I made 22 balls weighing 1-1.4 oz each. Brush the balls with egg yolk.
Place in a preheated oven at 180-200 degrees and bake until golden brown. Oven times vary, so watch for the color. It took me 8-10 minutes (I set the temperature to 200 degrees).
The honey cookies are soft and porous inside, with a crispy crust on top. Bon appetit!
