Recipe for a tender and very nutritious baked casserole that is easy, quick, and simple to make. A great option for a kids' breakfast. The pumpkin flavor in the casserole is not too strong thanks to the apples, and the semolina gives it a tender texture. Give it a try - it's very delicious!

To prepare the baked casserole with apples and pumpkin, finely chop the pumpkin using a blender (or simply a knife).
Cut the apples into larger pieces. I like when there are apple chunks in the casserole. If you prefer a more uniform casserole, use a blender.
In a skillet, add butter, pour in the milk, add the pumpkin, and simmer for 10 minutes, stirring occasionally.
Then add the apples, sugar, and simmer for another 5 minutes.
Add the semolina, stir, and set aside to cool.
Beat the eggs well and mix them with the slightly cooled pumpkin mixture. Pour the mixture into a buttered dish.
Place the casserole in an oven preheated to 375 degrees Fahrenheit for 15-20 minutes. Serve the baked casserole with apples and pumpkin warm or cold.
It's easier to slice the casserole when serving it cold.
