Quick and easy recipe for a berry cake. You can use fresh or frozen berries. The cake turns out tall, moist, and very delicious. My daughter and I like the version with cherries, but you can use any berries you like.
Kefir
1 1/4 cups
Eggs
3 pcs
Sugar
1 1/4 cups
Vanilla sugar
1 packet
Flour
2 3/4 cups
Baking powder
1 1/2 tsp
Cherries
fresh or frozen
To prepare the berry kefir cake, beat the eggs with sugar until fluffy.
The cake is moderately sweet, if you like sweeter cakes, you can increase the amount of sugar to 300 g.
Add kefir, baking powder, vanilla sugar, and mix well.
Gradually add sifted flour until you get a sour cream-like batter.
Sort through the berries, wash and dry them. If using frozen berries, thaw them beforehand and remove excess juice.
Line a baking form with parchment paper, lightly grease it with butter. Spread half of the prepared batter. Add cherries on top and sprinkle them with sugar.
Spread the second half of the batter. Bake the cake in an oven preheated to 350 degrees for 40-60 minutes (depending on the oven).
