Simple and quick recipe for lenten oatmeal cookies. The cookies are soft with a hint of honey, perfect for enjoying with tea or coffee. Nuts can be replaced with raisins or finely chopped dried apricots, if desired.
Oat Flakes
1 1/2 cups
Olive Oil
6 tbsp (refined)
Honey
4 tbsp
Salt
1/4 tsp
Baking Powder
1 tsp
Walnuts
2/3 cup
To prepare lenten oatmeal cookies, grind the oat flakes into flour using a blender.
Coarsely chop the nuts.
Combine oat flakes, honey, baking powder, salt, vegetable oil, and mix. Add the nuts and mix well. Shape the dough into balls the size of a walnut. Line a baking sheet with parchment paper and place the balls on it, leaving some space between them.
Bake the lenten oatmeal cookies in the oven at a temperature of 180 degrees for 20 minutes. Sprinkle the finished cookies with powdered sugar and serve with tea.
