This is an amazing recipe for me! The simplest ingredients result in such a marvel! Pannukakku in Finnish literally translates to pancake in a pan. It tastes very similar to cream puff pastry with a crispy top and a soft, tender inside. Incredibly delicious! You won't need to rush to the store to get the ingredients!
To prepare the Finnish oven pancake, first place a skillet (or baking dish with a diameter of 8-10 inches) in the oven on the middle rack, preheat it to 220°F (conventional top-bottom mode) to let both the oven and the skillet heat up.
Place all ingredients in a blender, and blend everything well until the batter is liquid.
Remove the hot skillet from the oven, add butter to it, wait for it to melt, and pour in the batter.
Place in the oven for 18-20 minutes, depending on your oven. Around the 10-minute mark in the oven, a miracle will begin! The pancake will rise in the middle and at the edges. It should brown nicely, and then the pannukakku will be ready!
Now sprinkle the Finnish pancake with powdered sugar, add fruits, jam, preserves... in short, whatever your heart desires, and enjoy!
