Quick and easy recipe for a raspberry pie. The sour cream filling makes it soft and very tender. You can use either frozen raspberries or other tart-sweet berries.
Raspberries
1 1/2 cups
Dough:
Butter
1/2 cup
Sugar
3/4 cup
Eggs
2 pcs
Sour Cream
1/4 cup
Flour
1 1/3 cups
Baking Powder
1 tsp
For the filling:
Sour Cream (20-25%)
1 cup
Sugar
1/4 cup
To prepare the raspberry pie with sour cream filling, combine softened butter and sugar, beat with a mixer until the mixture is slightly fluffy. This can also be done using a fork.
Add eggs and sour cream, mix until smooth. Now add the flour with baking powder, mix everything again.
Grease a baking dish with butter and dust with flour. Pour the batter into the dish and spread it evenly.
Place raspberries on top. Bake the pie for 35 minutes in a preheated oven at 350°F. While the pie is baking, mix sour cream and sugar.
Remove the finished pie from the oven (check for doneness with a wooden skewer) and pour the hot pie with sour cream and sugar. Let it cool first on the table, then refrigerate to let the sour cream filling set.
Remove the raspberry pie from the dish. Mine didn't turn out very aesthetically pleasing, but this pie is for a cozy tea time and the most important thing here is the taste! And the taste is just wonderful! Enjoy!
