Juicy plum-soaked butter sponge cake, soft plums enhancing its sweetness, and a crispy meringue topping with added almonds - this is a magical pie! At first glance, the recipe may seem too complicated, but it's not. 

Dough:
Flour

To make the plum and crispy meringue pie, beat butter with sugar using a mixer until a fluffy white mixture. Then add the egg yolks one by one, mixing well each time. Set the egg whites aside for now.
Then add lemon zest, coconut flakes, vanilla extract (or vanilla sugar), salt, and milk, mix everything until homogeneous.
Lastly, add the flour with baking powder, mix with a mixer until a uniform consistency.
Grease a pan with butter and line the bottom and sides with parchment paper (attach to the butter).
I greased the parchment paper slightly on the bottom of the pan.
Spread the dough, flatten it, and place it in a preheated oven at 180 degrees Fahrenheit for 30 minutes. This time will be enough to prepare the plums and beat the meringue.
Wash the plums, slice them into not too thin wedges.
In the mixer bowl, place the egg whites, salt, lemon juice, and start beating until soft fluffy peaks, then add sugar gradually.
Beat the egg whites until stiff peaks form, then add almond petals or almond flour. Gently fold the mixture from bottom to top, no need to mix for too long to avoid deflating the whites.
If you don't have almonds, it's okay, don't add them. The meringue will just be crispier with almonds.
Remove the baked crust from the oven, do not turn off the oven. Place the plums on top.
Top with the meringue, there's no need to level it, leave some careless swirls, it looks prettier that way. Place in the oven for 30 minutes.
The plum and crispy meringue pie is ready! Remove the parchment paper, let it cool slightly, and enjoy!
