Recipe of these cookies belongs to Austrian cuisine, known for its delicious desserts. These cookies are easy to make, very tasty, soft, and homely. Be sure to make them and impress your guests. Also, such cookies will make a wonderful gift; you can shape the 'windows' in the cookies into different forms (hearts like mine, trees, little people, etc.)
To make Linzer cookies, beat room temperature butter with sugar for about 2 minutes, add vanilla extract (vanilla, vanilla sugar), then add an egg and beat for about a minute.
In a separate bowl, whisk together all dry ingredients.
Add them to the butter, mix well until the dough comes together.
Divide the dough into two parts, wrap in plastic wrap, and refrigerate for about 2 hours.
While the dough chills, let's make the jam. You can use ready-made jam or thick preserves. I made jam from frozen strawberry puree. I placed it in a saucepan, melted it on the stove, added sugar, and cooked until thickened (I cooked the jam for about 20 minutes). Allow the jam to cool.
Roll out the cooled dough to a thickness of 1/8 inch. Cut out the bottom and top cookies with 'window' shapes like hearts using cookie cutters.
Place them on parchment paper and bake in an oven preheated to 350°F for 8-10 minutes.
Do not let the cookies turn golden brown; they should remain light with just a slight golden edge.
Dust the top cookies with powdered sugar.
Spread jam on the bottom cookies.
Join the two halves together. Fragrant Linzer cookies are ready, call your guests and enjoy!
