This cookie recipe will come in handy not only during fasting, but also as an option when you need to quickly prepare something. Starch, which is part of the cookie, makes it crumbly, and the cookies are really quick to make with a minimum of ingredients.
Flour
1 2/3 cups
Starch
1/3 cup
Baking Powder
1 tsp
Sugar
1/2 cup
Vanilla Sugar
1 packet
Water
1/2 cup
Sunflower Oil
1/3 cup
Salt
pinch
Walnuts
2/3 - 3/4 cup
Cinnamon
2 tsp
To prepare vegan crumbly shortbread cookies, mix flour, starch, and baking powder. Then add sugar, vanilla sugar, salt, water, oil. Knead elastic dough.
Chop the nuts using a blender and mix with cinnamon.
Roll out the dough into a rectangle measuring 10x16 inches, sprinkle with chopped nuts and cinnamon.
If you don't have nuts, you can sprinkle with just sugar or just cinnamon.
Roll the dough tightly into a log along the long side and cut into slices about 0.8 inches thick. Place the slices on a baking sheet lined with parchment paper. Bake the cookies in a preheated oven at 180 degrees Fahrenheit for 20 minutes.
If using a convection oven, preheat to 160 degrees Fahrenheit.
