French classic mini Madeleine cakes (or sponge cookies), the recipe is very simple and will not cause anyone difficulties. You just need to stick to the exact proportions, temperatures, and little nuances. They taste incredible - soft, airy with a hint of vanilla and lemon. Madeleines are very popular in France and Europe as a whole. They have a seashell shape - and that's the most important thing! On the reverse side, they have a characteristic bump (called a “sail”) and it must be there, it's what makes them authentic. If you want to make something simple and impressive - make Madeleines!

To prepare the sponge cookies madeleines, crack the eggs into a separate container, lightly mix, and weigh out the required 125g.
In a mixer bowl, combine sugar, lemon zest, natural vanilla extract, flour, and baking powder. Add the eggs to the dry ingredients, mix with a mixer until smooth.
Melt the butter until liquid. Add honey to the melted butter, mix well, and add to the main mixture when the temperature reaches 40 degrees Fahrenheit.
Knead until homogeneous.
Transfer the dough to a large bag and place it in the refrigerator for an hour.
The dough can be made in the evening and baked in the morning.
I use a silicone mold, no need to grease it, there are also metal molds that may need to be lightly greased with butter.
Fill the mold just over half full. Bake the madeleines in a preheated oven at 200 degrees Fahrenheit for 10-14 minutes.
My powerful oven baked the madeleines at 170 degrees Fahrenheit for 11 minutes in convection mode. Take into account the characteristics of your oven.
It's important for the madeleines to have a characteristic bump - a “sail”, not all over the surface, but only in the middle. You can dust the madeleines with powdered sugar, cover them with chocolate on top, but this is not necessary at all and they are very tasty as they are!
