To prepare fried zucchini with tomatoes and sorrel, dice the onion and bell pepper. Heat oil in a skillet and sauté the prepared onion and pepper until soft.
Add finely chopped sorrel, tomatoes, salt, and sugar. Cover and simmer for about 10 minutes.
If fresh sorrel is not available, canned sorrel can be used.
Slice the zucchini into 1-inch thick rounds. Coat them in flour and fry on both sides until golden brown.
Add the cooked zucchini to the sauce, mix slightly, and cook for an additional 3-5 minutes.
