To prepare apple pancakes with meringue, first make pancakes following the recipe for delicious water pancakes.
In principle, you can use any pancake recipe. The main thing is that they should be thin enough to roll easily.
Peel and dice the apples, remove the core. Stew the apples in a dry skillet for about 5 minutes. Then add sugar and cinnamon, stew for another 5-7 minutes. Let it cool.
Spread the filling on the pancake, roll it up like a roulade.
Slice into pieces 1-1.5 inches wide. Line a baking sheet with parchment paper and place the rolls on it.
Whisk the egg whites with a pinch of salt until foamy, then gradually add sugar and whisk until stiff peaks form.
Using a pastry bag (piping bag) or just a spoon, place the meringue on the rolls. Place in a preheated oven at 100 degrees Fahrenheit and bake for 20-30 minutes.
