Recipe for a vegetable salad, very popular in the former USSR countries. This salad used to be a staple at any feast, but nowadays it is not as popular. The salad got its name from the classic French dressing based on olive oil and white wine vinegar - vinaigrette. This salad is dressed with vinaigrette. There are many variations of this salad with canned mushrooms, peas, beans... In my family, we prefer vinaigrette with beans and preferably with homemade fragrant sunflower oil. It is a very healthy salad, suitable for fasting days, so prepare it and enjoy it for your health!
Beets
2.5 cups
Carrots
2 cups
Potatoes
2.5 cups
Sauerkraut
1 cup
Cucumbers
1 cup (pickled)
Beans
1 cup
Onions
1 cup
Salt
to taste
Sunflower oil
5-6 tbsp
To prepare the vinaigrette salad, cook the beans until tender, boil the carrots, potatoes, and beets, peel them, and cut into cubes.
Dice the cucumbers and onions, squeeze the sauerkraut and chop it finely.
Mix all the ingredients, add salt to taste. Dress with sunflower oil.
Serve the vinaigrette chilled, garnished with parsley and onion greens.
