This cream based on this recipe turns out very tender, but stable, and has a slight cottage cheese flavor. It is not difficult to make and I often use it in my cakes based on honey or regular white sponge cake.
Sour Cream
1 1/2 cups (20% fat)
Vanilla
a pinch or 1 tsp vanilla sugar
Sugar
1/2 cup
Flour
3 tbsp
Egg
1 pc
Butter
1/2 cup (soft)
To prepare sour cream ice cream, put sour cream, vanilla, sugar, egg, and flour in a bowl. Mix everything until smooth. Place the bowl over a water bath and cook until thickened.
If you run a finger through the cream on a spoon and it doesn't run or disappear, it means the mixture is ready. Let it cool completely.
Whip the butter until fluffy and gradually add the cooled mixture, beating each time.
