Starch Pancakes with Baked Cottage Cheese in the Oven
There are many recipes for pancakes, and especially when Maslenitsa comes, you always try to surprise your loved ones with something interesting and new. I suggest preparing thin starch pancakes with cottage cheese, which are rolled up and additionally baked in the oven. I baked starch pancakes for the first time and I was pleased with the result. The edges of the pancakes are lacy and crispy, and the middle is very tender and elastic.
As a result, we get a very delicious dish, or one could say a cottage cheese pancake casserole, soft and tender inside, with a crispy crust on top. Give it a try, it's very delicious!
For Pancakes:
Starch
1 cup, potato or corn (200 g)
Milk
1 3/4 cups, room temperature (400 ml)
Eggs
2 large, room temperature
Sugar
2 tbsp
Sunflower Oil
2 tbsp, refined
Salt
1/2 tsp
For Filling:
Cottage Cheese
2 1/4 cups, preferably homemade (500 g)
Sugar
3 tbsp
Cream
2-3 tbsp, or milk
For Pouring Mixture:
Cream
1 cup (250 ml, 20-30% fat)
Egg Yolks
3
Sugar
2 tbsp
Vanilla
or vanilla sugar
To prepare starch pancakes with baked cottage cheese in the oven, start by making the pancakes. Mix all the ingredients for the pancakes using a whisk in a large bowl, or you can use a blender. The batter should be thin and not sticky - this is normal and how it should be.
Starch does not dissolve in milk; its particles will be suspended, so the batter will be liquid and not sticky. Once the batter hits the hot skillet, the starch will start to swell, forming a colloidal solution and polymerizing. The pancakes turn out thin because the batter is liquid and spreads well in the skillet.
For the filling, add sugar and a little cream or milk to the cottage cheese. Mix everything until smooth.
Brush the pancakes with sweet cottage cheese and roll them up.
Cut each pancake into three parts, trimming the uneven edges beforehand.
Take a small baking dish, grease it with butter, and line the bottom with pancake trimmings. Place the rolled pancakes vertically in the dish tightly next to each other.
Mix the cream, egg yolks, sugar, and vanilla. Pour this mixture over the baking dish filled with pancake-cottage cheese rolls.
