For this recipe, both yeast and "quick" pancakes - made with milk or kefir, will be suitable for the cake. The main condition is that they should not be thin; the layers in the cake should be noticeable. Cinnamon or lemon zest can be added to the apples if desired.

To prepare the pancake cake, start by baking the pancakes. Separate the egg yolks from the whites. Set the whites aside in the refrigerator. Beat the yolks with sugar, add milk, and beat again with a mixer for 1 minute.
Add a pinch of salt to the whites and beat until stiff peaks form.
Gradually add sifted flour, starch, and baking powder to the yolk-milk mixture. Mix well to avoid lumps. Finally, add the whites and gently fold them in from bottom to top.
Grease a skillet with a thin layer of vegetable oil (refined) and fry the pancakes on both sides. Since the batter is not very liquid and airy, it doesn't spread quickly in the pan, so you'll need to adjust. The pancakes should not be thin.
If using a non-stick skillet, there is no need to grease it.
While the pancakes cool, prepare the apple "cream". Wash, peel, core, and cut the apples into small slices. Place them in a saucepan, add half a cup of water, and stew covered until soft.
Then add sugar, butter, and cook uncovered for another 5 minutes.
Remove the apples from heat and puree them using a blender.
Take a pancake, spread it with the apple puree and sprinkle with walnuts. Place another pancake on top, add puree and walnuts again. Repeat this process until you run out of pancakes.
The pancake cake can be decorated to your liking. I had some leftover chocolate glaze, so I coated the sides of the cake with it. Then I sprinkled the entire cake with more walnuts and decorated it with red currants. You can use chocolate, meringue cream, boiled condensed milk, chocolate nut paste... Let your imagination run wild!
