The taste of kozinaki is familiar to all of us from childhood. Almost every child loves sweet and hearty kozinaki. In general, kozinaki are a Georgian treat traditionally served at the New Year's table. There are different recipes for kozinaki with various nuts, honey, and even apples. I suggest a simple recipe that can easily be made at home.
Sugar
1 cup
Walnuts
1 cup (chopped)
Water
2-4 tbsp
Lemon juice
several drops
Sesame seeds

To prepare homemade kozinaki, chop the nuts in a blender, slightly dry them in a dry skillet, transfer to a plate, and set aside. Prepare the mold in advance. Line it with parchment paper and grease with butter or vegetable oil.
Then, pour sugar into a skillet, add water, lemon juice, and cook caramel. Stir constantly while cooking. The caramel should be light brown, not too dark.
The main thing is not to overcook the caramel, otherwise it will taste bitter.
Add the nuts to the caramel (I also added some sesame seeds to the nuts, but this is optional), and mix.
Spread the caramel mixture into the prepared mold and distribute it evenly. After 2-3 minutes, make small cuts so it will be easier to break the kozinaki after it sets.
