Recipe for a cold soup that is prepared in hot weather along with okroshka. This dish is also called cold borscht, beet okroshka, kholodnik, and there are many recipes for it. In fact, the principle of making cold soups is as follows: any suitable and available products are added to a liquid base with a sour taste (fermented milk drinks, kvass, vegetable and fruit broths and juices). It is desirable to cook the ingredients as little as possible, always include plenty of herbs, and the dish should be well chilled. As a result, we get a tasty, healthy, and low-calorie dish. Prepare the vegetables for holodnik: wrap the beets in foil and bake in the oven for 40 minutes at 356 degrees Fahrenheit.
Then cool them down and grate them using a large grater.
Boil the eggs, cool them, and dice them.
Cut the cucumbers into cubes as well.
Mix kefir and water, add a pinch of salt, and mix. Place the vegetables in a pot (3 liters) and pour in the kefir mixture. Add finely chopped herbs, adjust salt if necessary, and mix.
