To prepare the turkey and tomato soup, wash and cut the turkey wing into two parts, peel and roughly chop the carrot, peel the onion, wash and roughly chop the celery stalks. Cover everything with cold water, add peppercorns and salt, and simmer the broth for an hour from the moment it boils over low heat, removing any foam.
Finely chop the garlic and hot pepper, thinly slice the red onion into half rings.
Grate the tomatoes using a coarse grater or blend them in a blender.
Heat oil in a skillet and sauté the onion, garlic, and pepper for about 3 minutes.
Add the tomatoes and simmer over low heat for 10-15 minutes.
Strain the ready broth, remove the meat from the bone and cut it into small pieces. Add the tomatoes with onion, garlic, and pepper to the broth.
Then add the prepared meat.
Bring the soup to a boil, add finely chopped parsley. If needed, add salt. Simmer everything together for 2-3 minutes and the turkey and tomato soup is ready!
