Recipe for fragrant jam with a pleasant lemony acidity. Nuts make the flavor even richer - the jam turns out very tasty. Fluffy pancakes, or maybe a scoop of ice cream or a piece of sponge cake drizzled with quince jam and a cup of hot tea - the height of enjoyment, especially on cool winter evenings...
Quince
2.2 lbs. (peeled)
Sugar
3 cups
Water
1 cup
Lemon
1 pc.
Walnuts
1 cup (or any other nuts of your choice)
Vanilla extract
a pinch
To prepare quince jam with nuts and lemon, wash the quince, peel it, and cut it into 4 parts. Remove the seeds and cut into slices.
Prepare the syrup by bringing water to a boil with sugar.
Add the quince to the boiling syrup and cook for 5 minutes. Remove from heat and let it sit for 12 hours. Bring the jam to a boil again, cook for 5 minutes, and let it sit for 12 hours.
Grate the lemon zest finely. Cut the lemon into thin slices, removing the seeds.
Dry the nuts in a skillet and chop them, not too finely.
Bring the jam to a boil for the third time, add vanilla, nuts, lemon, and zest. Cook quince jam with nuts and lemon for 15 minutes. Pour hot jam into jars and seal.
