A recipe from my childhood, which we called "Bird's Milk". Of course, it has nothing to do with the original. Back in those times, it was difficult to find the cake called "Bird's Milk" so the housewives baked this version of the cake. In reality, it is very delicious, soft, and tender, and the cream is just superb. And it is quick and easy to make.
For the batter:
Butter
1.3 cups
Eggs
3 pcs.
Baking Soda
1 tsp (combine with 1 tbsp lemon juice or vinegar to extinguish)
Flour
1 cup
Sugar
1 cup
Cocoa Powder
3 tbsp
For the cream:
Milk
2 cups
Semolina
2 tbsp
Lemon
1 pc.
Powdered Sugar
1 cup
Butter
1 cup (soft)
For the chocolate glaze:
Sugar
1/2 cup
Cocoa Powder
2 tbsp
Milk
3 tbsp
Butter
2 tbsp
Vanilla Extract
a pinch or vanilla sugar
To prepare the chocolate cake with lemon semolina cream, melt the butter. Add sugar and mix. Let it cool slightly.
Beat the eggs and add them to the butter and sugar mixture.
Then add the baking soda and sifted flour with cocoa. Mix everything well. The batter should have a consistency like sour cream.
Pour the batter into a pan (I used a 10-inch diameter pan), line the bottom with parchment paper. Bake in a preheated oven at 350 degrees Fahrenheit for 20-30 minutes. Check for doneness with a wooden skewer.
You can grease the pan with butter and sprinkle with breadcrumbs. You can use a smaller diameter pan for a taller cake layer.
Prepare the cream. Pour semolina into boiling milk and cook the semolina porridge (3-5 minutes). Remove from heat and let it cool completely. Once the porridge has cooled, add finely grated lemon zest (I remove the lemon zest with a grater) and mix well.
Whip the butter with powdered sugar until fluffy. Then gradually add the semolina porridge with lemon by spoonfuls, beating well each time. The cream is ready!
Cut the baked cake layer into two parts.
Spread one cake layer with the cream and place the second layer on top.
If you have a tall cake layer, you can cut it into three parts.
Prepare the glaze. In a small saucepan, combine sugar, vanilla, cocoa, milk, and mix. Place it on the stove over low heat and wait until the mixture boils. Once it boils, remove from heat and let it sit for 10 minutes.
Then add butter and beat with a mixer. The chocolate glaze is ready!
