These pastries won't require any special efforts on your part, they look beautiful and appetizing on the table. They are very tender and incredibly delicious. Instead of raspberries, you can use other berries or any berry jam.


Butter, softened
50 g
Vegetable oil
35 g
120 g
Warm kefir
120 ml
190 g
Cocoa powder
1 tsp
Baking powder
1 tsp
Baking soda
1/2 tsp
a pinch
Red food coloring
6-8 drops
Cream cheese
150 g
Heavy cream
150 g
Powdered sugar
50 g
Fresh raspberries
To prepare the Red Velvet pastries, mix the eggs, sugar, vegetable oil, and softened butter in a bowl and beat with a mixer until smooth.
Add warm kefir and food coloring, stir. If the dough is not red enough, add a little more food coloring.
Mix the dry ingredients and add to the main mass, beat again until smooth.
I lined a baking sheet with parchment paper. Using a pastry bag, scoop the dough into circular shapes with a diameter of about 1.5 inches. Leave some space between them, the circles will increase in size during baking. Bake in a preheated oven to 350°F for 10-12 minutes, then let cool.
To easily and evenly scoop the dough, you can draw circles on the back of the parchment paper.
For the cream, first beat the cold cream with powdered sugar until stiff peaks form. Then add the cream cheese and simply stir with a whisk until smooth.
The cream should be cold, that's important. For better whipping, you can keep it in the freezer for 15-20 minutes.
Now assemble the pastries. Using a pastry bag and a nozzle (optional), scoop the cream in a circle on one half of the pastry, and place a few raspberries in the center.
Then cover with the other half, and the Red Velvet pastry is ready! It has a simply delightful color and doesn't need any additional decorations.
