Undoubtedly, a festive dish with a light and delicate sauce. Usually mayonnaise is used in the recipe for liver cake, but I wanted to lighten this dish a bit. I used low-fat cottage cheese, soft sandwich cheese, and a little mayonnaise. It turned out very delicious!

Preparing liver cake with cheese will take some time. To start, fry finely chopped onions.
Then add grated carrots and sauté everything together.
Now let's prepare the cottage cheese and cheese sauce. Take cottage cheese, add cheese to it, and mix until smooth. Add chopped garlic, chopped herbs, finely chopped cucumber, and mayonnaise.
Be sure to taste and, if needed, add salt or more mayonnaise to your liking. For those who don't like spicy food, reduce the amount of garlic.
Now let's prepare the liver pancakes. Clean the liver from membranes and pass it through a meat grinder. Add eggs, mix well. Then add milk, flour, salt, pepper, and mix everything thoroughly.
Bake the pancakes on a greased pan on both sides.
It's very convenient to flip the pancakes using a wide spatula.
Assemble our liver cake with cheese. Stack the pancakes on top of each other and spread each with the sauce, then sprinkle with carrots and onions on top. Only spread the top pancake with the sauce.
Decorate the liver cake with cheese. Beat butter with a blender with boiled carrots to get a beautiful orange cream. Cut out leaf shapes from pickles. Lightly spread the sides with sauce (or mayonnaise) and sprinkle with chopped dill. Sprinkle the top of the liver cake with grated egg whites. Decorate the cake's perimeter with orange flowers (use a pastry bag), arrange cucumber leaves, and place currants in the center of the flowers. The liver cake with cheese is ready!
