Hanum is a meat roulade cooked in steam. A recipe of the Uzbek national cuisine. There is a traditional meat dish of the Central Asian peoples - manti, so hanum (or hanuma) is one of the varieties of this dish. It turns out very hearty and delicious! This roulade caused a storm of positive emotions in my family. Hanum tastes like real dumplings with meat!

To prepare hanum-roulade, mix the dough from flour, water, eggs, and salt in the usual way. Divide it into 3 parts. Roll each part into a ball and leave it covered with a napkin for 30 minutes.
Grind the meat through a meat grinder (use the finest grid) together with onions and carrots. Then add salt, black pepper, and mix well.
Roll out each dough ball to a thickness of 1 mm and brush with oil.
Spread the filling evenly on the sheets of dough and roll them into roulades, pinch the edges to prevent the juice from leaking out.
Steam the roulades for 40 minutes. Before that, grease the steamer grates and the roulades with oil.
Slice the cooked roulades into pieces about 4-6 cm long and place them on a plate. Serve the hanum with sour cream and chopped greens - parsley, dill, and a little cilantro.
