Simple recipe for homemade sausage without gelatin and agar agar. The sausage is juicy and firm in texture, it doesn't fall apart. You can add your favorite spices if desired. It can be used for sandwiches or served as a main course with side dishes and vegetables.


Chicken breasts
2.2 lbs
Chicken thigh fillets
6 pcs
10% cream
2/3 cup
Salt
1.5 tsp
Ground black pepper
to taste
Dried garlic
to taste
Paprika
to taste
To prepare homemade chicken sausage, grind the chicken breasts into minced meat using a food processor.
Slice the chicken thighs into small pieces and lightly beat them with a knife to tenderize. This will allow them to absorb the cream and spices well.
Combine the minced meat in a bowl, add salt, spices, and beat it a bit more.
I added curry and a chicken spice blend.
Then add the cream and mix until the meat absorbs the liquid.
You can replace the cream with chicken broth.
Next, take an oven roast bag and cut it open on one side. Unfold it, sprinkle with paprika (I used smoked), and spread the meat on it.
Roll the meat tightly into a compact roll and tie it securely on both sides. Try to remove as much air as possible from the meat to ensure an even consistency for the sausage.
Bake in a preheated oven at 350°F for 1 hour.
Alternatively, you can boil the sausage on medium heat for 1 hour in boiling water.
