This recipe is perfect for people who do not eat meat, as these patties are high in protein and low in fat since they are baked in the oven. The patties are very hearty and nutritious, you can serve them with plain natural yogurt or a yogurt-based sauce.

Red Lentils

To prepare lentil patties in the oven, wash the lentils beforehand and leave them in cold water for 1 hour. Red lentils quickly absorb water and become soft. Drain the water and rinse again, also rinse the bulgur with water.
Grate the onion, carrot, zucchini, and potato on a coarse grater and fry them in a small amount of oil, adding a pinch of salt. Fry briefly until the vegetables are soft.
Finally, add all the spices, tomato paste, and minced garlic, mix well.
Then add the bulgur here, mix again and remove from heat. The first part of the filling is ready.
Now take a blender and put pieces of bread in it, blend until fine crumbs, then add the lentils, cilantro, lemon juice, a little salt - blend everything together.
The mixture will be porridge-like, not completely homogeneous in consistency. The second part of the filling is ready.
Combine both parts of the filling into one mass and taste it, add salt and lemon juice if needed.
Shape the patties, slightly wet your hands with water so the mixture doesn't stick. I scooped the filling with an ice cream scoop, this way the patties come out the same size. Place the patties on a baking sheet lined with parchment paper. Lightly brush the tops with vegetable oil for a crispy crust.
Bake the lentil patties in the oven preheated to 400 degrees Fahrenheit, for 12 minutes on one side and 12 minutes on the other. Keep an eye on them as they should develop a crispy crust. The number of patties depends on their size; I made 18 pieces.
