Recipe is indeed very quick and easy, it does not contain eggs and you won't need a mixer. The cookies turn out to be moderately crunchy and flavorful. Paired with tea or milk - incredibly delicious!


Rolled oats
1 cup
Coconut flakes
1 cup
1 cup
1/2 cup
Zest of 1 orange
a pinch
1/2 cup
2 tbsp
Baking soda + boiling water
1 tsp + 2 tbsp
To make crunchy tea cookies, mix oats, coconut flakes, sugar, salt, vanilla, and orange zest in a bowl. Mix everything together.
In a saucepan, add butter, honey, and heat on the stove to dissolve. Once the butter is melted, remove from heat.
Dissolve 1 tsp of baking soda in 2 tbsp of boiling water.
Add the soda mixture to the melted butter and honey, and mix. The mixture will start to foam due to the reaction of honey with soda.
Pour the hot mixture into the dry ingredients and mix using a spoon. The dough will be crumbly but easily come together.
Shape the dough into walnut-sized balls and place them on a baking sheet, spacing them apart so they don't stick together. Bake in a preheated oven at 180 degrees Fahrenheit for 10-12 minutes.
Adjust the baking time according to your oven, the cookies should turn golden brown. Right after baking, the cookies will be very soft, so carefully transfer them onto a rack to cool completely.
