Many housewives prepare vegetable salads for winter, which delight their loved ones on cold winter days. To prepare vegetable pilaf for winter, first prepare the vegetables. Wash, peel, and chop them. Grate the carrots coarsely.
Dice the onion.
Dice the sweet bell pepper as well (you can cut it into strips).
In a large pot, heat the oil well (for 10 minutes). Then add the onion and sauté until soft (for 10 minutes). Next, add the carrots and simmer for another 10 minutes. Then add the sweet bell pepper and simmer for another 10 minutes. Stir everything carefully during the process.
Next, pour in the tomato juice and cook for another 10 minutes.
Now add the rice, salt to taste, and cook on low heat for 40 minutes, stirring occasionally.
Finally, add the vinegar, mix well, distribute into sterilized jars, and seal. Wrap in a blanket until completely cooled. The yield is about 4 liters of salad. Vegetable pilaf for winter is ready!
